# What You'll Need:

→ Salad Components

01 - 2 large heads romaine lettuce, washed and chopped
02 - 2 grilled chicken breasts (approximately 10 ounces), sliced
03 - 2 cups croutons
04 - 1/2 cup shaved Parmesan cheese

→ Caesar Dressing

05 - 1/2 cup mayonnaise
06 - 1/4 cup sour cream
07 - 2 tablespoons fresh lemon juice
08 - 2 teaspoons Dijon mustard
09 - 2 anchovy fillets, finely minced
10 - 1 garlic clove, finely minced
11 - 1/4 cup grated Parmesan cheese
12 - 1 teaspoon Worcestershire sauce
13 - Salt and freshly ground black pepper, to taste

# Steps:

01 - Preheat a grill or grill pan over medium-high heat. Season chicken breasts generously with salt and pepper. Grill for 6 to 7 minutes per side until internal temperature reaches 165°F. Let rest for 5 minutes before slicing into thin strips.
02 - Whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, minced anchovies, garlic, grated Parmesan, and Worcestershire sauce in a medium bowl until smooth and creamy. Season with salt and pepper to taste, adjusting acidity as needed.
03 - Place chopped romaine lettuce in a large salad bowl. Drizzle with enough Caesar dressing to coat leaves evenly, tossing gently to combine.
04 - Arrange sliced grilled chicken over dressed lettuce. Sprinkle with croutons and shaved Parmesan cheese. Serve immediately with additional dressing on the side.

# Expert Advice:

01 -
  • The homemade dressing takes literally five minutes and tastes infinitely better than anything from a bottle
  • Everything comes together in under 40 minutes with ingredients you probably already have
02 -
  • The anchovies look intimidating but they completely melt into the dressing and you would never guess they are there
  • Letting the chicken rest before slicing is absolutely crucial or all those delicious juices will end up on your cutting board
03 -
  • Dry your romaine lettuce completely after washing, otherwise water clinging to the leaves will dilute your dressing
  • Taste your dressing before tossing it with the lettuce, adjust the lemon or salt now rather than trying to fix it later
