# Steps:
01 - Separate yellow dandelion petals from green sepals and stems. Discard any green material to ensure a pure floral flavor.
02 - Combine dandelion petals and water in a large saucepan. Bring to a boil and then reduce to a gentle simmer for 10 minutes.
03 - Remove from heat, cover, and allow the infusion to steep for a minimum of 6 hours or overnight for optimal aroma.
04 - Pass the mixture through a fine mesh sieve or cheesecloth, pressing gently to extract all liquid. Discard spent petals.
05 - Pour 3 cups of the strained dandelion liquid into a clean saucepan. Add extra water as necessary to reach this volume.
06 - Stir in lemon juice and fruit pectin. Bring mixture to a rapid boil over high heat, stirring constantly for even distribution.
07 - Incorporate granulated sugar and honey. Return to a rolling boil and cook for 1 to 2 minutes, stirring continuously until thickened.
08 - Take off heat and remove any foam from the surface.
09 - Using a ladle, pour hot jelly into sterilized jars, keeping 1/4-inch headspace. Clean rims, seal with sterilized lids, and process jars in a boiling water bath for 5 minutes.
10 - Let jars cool undisturbed. Confirm proper sealing before storing in a cool, dark environment.
